We are delighted to introduce, Paul O'Connor, our head chef here at the Herbert Restaurant at Cahernane House Hotel.

Originally from Farranfore, Co. Kerry, Paul O’ Connor started his career in Inchydoney Lodge & Spa where he worked as a commis chef. He then went on to work in Sheen Falls Lodge in Kenmare, Co. Kerry for three years where he was appointed the role of Head Chef.

In 2004, Paul decided to pack up and move to Australia where he proceeded to pursue his passion and career as a chef. It wasn’t long until his talent was recognised down under and he was offered a role as Sous Chef in the Sydney Opera House which was then managed by the Truffle Group. During his time with the Truffle Group, they were awarded the “Best Australian Catering Company 2005/2006”. This award was decided during a dinner event for the Lord Mayor of Sydney in the Opera House. Over 2000 guests attended the event and Paul played a key role in co-ordinating the dinner with his colleagues.

Paul spent a total of two years in Australia before he decided it was time to return to Co. Kerry to work as the Head Chef in the 4-star Lake Hotel, Killarney. During the six years he spent at Lake House, the Hotel received its first ever AA Rosette. Paul also led his kitchen team in the Failte Ireland Optimus Programme which recognises best practice in the hospitality industry in Ireland.

This was then followed by a year and a half in the Yew Tree Restaurant at Muckross Park Hotel which also holds an AA Rosette.

Now as Head Chef at the Herbert Restaurant at Cahernane, Paul has marked his recent appointment with the addition of 2 AA Rosettes for the Herbert Restaurant. Further to this he is among Ireland's top chefs featured in the renowned “Chefs of Distinction Recipe Book” which features dishes from some the UK and Ireland's finest hotels.

Only using the finest local produce, Paul has created a menu which has both an Irish and a European influence with some modern touches.

Paul and his culinary team look forward to welcoming you to Herbert Restaurant at Cahernane House Hotel.
