Food Provenance

Aside from the superb service and talented kitchen team, what makes our award-winning food stand out from the crowd are our ingredients. At Cahernane, it is important to us that we support and acknowledge our local suppliers without whom we would have nothing to cook! Our suppliers are hand-picked by our head chef Eric Kavanagh and provide world-class meat, fish, dairy, herbs and vegetables.  Here are a small sample of our suppliers who value quality and sustainability above all else.

 

Paudie Spillane’s Smoked Salmon

Spillane Seafoods is a family run business situated in Fossa, on the outskirts of Killarney town in Co. Kerry where salmon stocks are abundant. Started in 1973 by Michael and Finola Spillane, the business continues under the management of their son Paudie Spillane. Spillane Seafoods has always sought to capture what they believe to be the essence of Ireland in the food they make.

 

The salmon they use are graded and sorted and only the very best are selected for the smoking process. Salmon are filleted by hand, trimmed and pin-boned. The fish are then salted for 8 hours. Once this process is completed the fish are thoroughly rinsed, placed on trays and transferred to the kiln. The drying process commences – for approximately 3 hours and then the speciality art takes over.

 

Seasoned oak logs are chipped on-site using only Kerry oak and these chips are slowly burned for 9 hours. It is this seasoned wood that gives Spillane Seafoods Smoked Salmon its unique flavour. Once the smoking process is complete the product is refrigerated and then ready to be sent to Cahernane for our guest’s enjoyment.

 

Ring of Kerry Lamb

The Ring of Kerry Lamb group is made up of a group of over 30 sheep farmers who live around the Ring of Kerry. Motivated by a common commitment to quality and a drive to keep their individual enterprises sustainable, they decided in Spring 2009 to come together as a group and market their lamb directly. Having partnered with local butchers, they can guarantee us the highest quality product from an environmental and welfare perspective on-farm to processing, packaging and transport.

 

Kerry lamb has a nationwide reputation for succulent and well-rounded flavour. The locally bred product is sought throughout the country and the Ring of Kerry Lamb Group is at the forefront of quality supply.

 

Members retain ownership of their lamb from the day it is born right through until it is delivered directly to the hotel. This enables the group to control all aspects of the supply chain and guarantee Cahernane’s customers an excellent taste experience. All lamb is dry matured for seven days ensuring tenderness and flavour and the product is fully traceable from farm to fork.

 

Ballyhoura Mushrooms

Ballyhoura Mountain Mushrooms is a company run by Lucy Deegan & Mark Cribben based in the Ballyhoura Mountains that border the counties of Cork, Limerick & Tipperary. Their aim is very simple, to grow and supply the finest possible quality speciality mushrooms and mushroom products.

They supply Cahernane with a superb range of cultivated speciality mushrooms. They also provide seasonal wild mushrooms and plants they forage themselves.

 

They also produce and continually develop a wide range of products ranging from mushroom oils, vinegars, ketchups, seasonings, dried mushrooms and flower blossom syrups. They have been the recipients of a number of awards that recognise the quality of their produce. We are very pleased to include them in our dishes here at Cahernane.
